Meet :Dave Aschwander CHILL SWITCH WINES

I have been making wine for about 20 years in CO, and I have had my own winery since 2012. I have family in Switzerland who have been in the wine business probably forever. I make natural or clean wine, with virtually no additives and zero adjustments. I prefer to allow the grapes to express themselves with seasonal variation intact. All of my wines are aged about 30 months to stabilize and clarify without fining or filtering. My reds are aged in french oak barrels and my whites in a combination of neutral french oak barrels and stainless steel. All storage of wine is done in glass, steel or oak barrels, a very traditional approach. At Chill Switch, patience, cleanliness and diligence are how wine is made. Come try the difference!

Meet TARA FITZGERALD The culinary mastermind behind The New Fork Foodie, a popular hot dog cart and catering business based in Cedaredge Colorado. Originally from the bustling streets of New York City, Tara grew up surrounded by a rich tapestry of flavors, colors, and cuisines that ignited her passion for food. From classic street food to fine dining, the diverse and vibrant food scene in NYC became her playground and primary source of inspiration.

After years of exploring the city’s iconic restaurants and experimenting with various dishes, Tara decided to bring a piece of New York to the Western Slope. In 2022, she launched The New Fork Foodie, where she offers an elevated take on classic street food, including her signature gourmet hot dogs and Gyros. With a knack for creating bold flavors and combining high-quality ingredients, Tara has turned her food cart into a local favorite, known for its creative offerings and impeccable taste.

Beyond the cart, The New Fork Foodie also offers catering services, bringing the spirit of NYC’s diverse food culture to private events, parties, and celebrations throughout Colorado. Whether it’s a casual gathering or a special occasion, Tara’s ability to craft memorable food experiences reflects her love of both food and the communities she serves.
